This is life! I had steaks laid out, thinking it was only going to be my husband, my son, and myself. I was wrong. I ended up with an extra kid and my daughter. The quickest thing to thaw out of the freezer is ground beef. So hamburgers it was.
There are some weeks that I just dread going to the store. This was one of them. We have had a hectic week. On our way back from out of town, I stopped at the store to pick up the few essentials I knew we needed at home. I didn’t go prepared with a list. I was literally stopping on the way home after being on the road for 8 hours, AND the kids were hungry. That little stop was more for making sure I could feed them when we walked in the door and get the few items I knew I needed.

This meant that we had no hamburger buns. Just to note, I have a hard time buying hamburger buns. Our crew doesn’t eat them very often. We usually use fresh, toasted bread. I have made buns on occasion, but it takes a while to put them together. Unfortunately, I don’t plan well when it comes to weeknight dinners. This time was different. I decided to try out a new recipe. The goal was to make it within an hour. That’s approximately how long it would take for our burgers and steaks to be done on the Pit Boss.

When I say this recipe is easy, I mean it. It is so quick and simple. The great thing is that the dough is very versatile. Meaning you can make rolls or buns with this recipe. I’m thinking that you might be able to freeze these as well, but I haven’t experimented that far. Plus, the couple I had left have already been eaten as a roll or sandwich.
The photo I took shows the size of the hamburger buns I made. They were quite large, but the whole time the kids and the hubs were eating them, they couldn’t stop talking about how soft and delicious they were.
Here is a tip for you:
I own a bread machine. I don’t care what anyone thinks. I am definitely not a snob about it. That thing has been a lifesaver. I use it to mix my dough all the time. It frees me to go about other things while the dough is mixing in the machine. I simply follow the directions on the recipe up until it requires me to knead, and then I toss it into the machine to do the rest of the work.
If you decide to use your machine for these, you simply use the dough function. Once it is finished kneading, take the dough out immediately and cut it into your preferred size. DO NOT let it rise in the machine. Since this recipe calls for 2 tablespoons of active dry yeast (yes, that’s a lot), you will only allow the dough to rest while you are waiting for the oven to preheat.
Now if you don’t have a bread machine, knead by hand. All you have to do is knead it into a soft dough for about 5 minutes.
The dough will still be a little sticky, regardless of how you knead it. I did notice that I added a little more flour to my machine as it was kneading to keep it from being too wet. However, when I went to cut the dough, I simply wet my fingers to be able to form it into the size of ball I wanted.
My family said these were the best buns I had ever made. It will definitely be a repeat recipe in my house. It gives me an even better excuse not to buy the store’s hamburger buns.

Your Choice of Buns or Rolls
Did you forget to grab hamburger buns, hotdog buns, or rolls on the way home? No worries! These simple rolls are made in less than an hour. No rise time required!
- 2 tablespoons active dry yeast
- 1 cup plus 2 tablespoons warm water (110° to 115°)
- ⅓ cup avocado oil or oil of your choice
- ¼ cup sugar
- 1 large egg, room temperature
- 1 teaspoon salt
- 3-3½ cups unbleached all-purpose flour
In large bowl, dissolve yeast in warm water. Add oil and sugar; let stand for approximately 5 minutes.
Add the egg, salt, and enough flour to form a soft dough.
Turn onto a floured surface; knead until smooth and elastic, 3-5 minutes. If you have a bread machine, use the dough function. However, do not let it rise.
Divide the dough up to 12 pieces. This all depends on if you want rolls or buns.
Shape dough into a ball and place 3 inches apart on greased or lined baking sheet.
Preheat oven to 425℉
Cover and let rest for 10 minutes during preheat. Bake until golden brown, approximately 8-12 minutes. Remove from pans to wire racks to cool.
