This title is very deceiving. It says “Keto,” and it is. However, for those in your family who constantly complain and say they don’t like keto (don’t tell me that you don’t have those people in your life), they will NEVER know it with this recipe. I’m sure you have heard that over and over again, but it is true with this recipe.
My dad is the pickiest eater ever. I mean, he is literally a meat, potatoes, and bread guy, but he will eat these. Now don’t go telling him they are keto, or he won’t touch them. I know—it’s weird.
I have made these for our church brunch and family gatherings, and they don’t last long at all. Afterwards, when people ask me for the recipe and I tell them they are made with coconut flour, they are shocked.
My kids don’t eat eggs, but they will eat these. I could keep going on and on about this recipe, but I won’t bore you.
I cannot take credit for this recipe. I didn’t invent it, and I sure didn’t make any adjustments; that is just how delicious these really are.
As we’ve talked about in previous posts, getting together with a friend (“You’ve Got A Friend In Me“) and self-care (“Oh, Wait! I Need To Do That”), this would be a great combination to pair with a cup of coffee or tea. These bites are light and hearty, and they are only 1.5 carbs each!
The author of the recipe does use a “Sunday” ham, and that’s great if you have recently made one. However, you can also use cubed ham, which is found in the refrigerator section of your local grocery store.
I love this recipe because I have all of the ingredients on hand except for the ham. Plus, another win is how quickly you can make these.
