Easy-Peasy Cinnamon Rolls

Choosing a recipe this week was really hard. I have so many that I want to share with you that it gets difficult to only give you one. I try really hard to find recipes that I know everyone can do and that don’t take a lot of time. My goal is to help you simplify your meals. I know as a busy parent that it gets difficult trying to get meals to the table, especially after a long day of work. When that happens, I find myself wanting to just go find a restaurant to eat at. Then, when we get ready to pay, I instantly regret my decision. Not to mention that a lot of fast-food restaurants don’t agree with me.

The recipe I chose for today goes along with my blog post. At our tea, I wanted something that I could quickly put together. One of the recipes I chose was these simple cinnamon rolls. As you know, I already have a sourdough cinnamon roll recipe on here. It is delicious. My daughter said she prefers the sourdough cinnamon rolls. However, I know there are many that do not have a sourdough starter. I promise that I will get to that recipe one day; I just have to have a moment to put it together. Knowing this, I decided to test out the easiest cinnamon roll recipe I could find and share it with you.  Plus this recipe is just as adaptable for my Aly Rolls (AKA cinnamon rolls without the cinnamon for one of my favorite twins that is highly allergic to cinnamon).

This recipe uses commercial yeast and only requires a 90-minute rise time. I have made these in an afternoon, prebaked them, and placed them in the freezer for later use. That is one of the reasons I chose this recipe for the tea. I knew it would be simple to put it together and have fresh rolls. 

Now, this isn’t my recipe. However, I did tweak it just a little. I’m going to give you the tips I have, share the link, and then I will post my personal recipe for the frosting. Our family doesn’t like frosting that is very sweet, and so I’ve tweaked that as well. Make sure you read the author’s notes on the recipe. She gives plenty of tips and tricks as well. 

  1. Be sure to level your flour, as the author points out. It does make a difference in the dough.  
  2. You CAN substitute the sugar for keto sugar! It really is very simple. It is cup-for-cup. The recipe for the dough calls for ¼ cup of granulated sugar. You can simply use granulated erythritol or monk fruit. The same can be done in regards to the filling. The filling calls for 1/3 cup of packed brown sugar. You can replace it with Swerve Brown.
  3. For the milk, I used kefir. The dough seemed a little thicker with the kefir, so whole milk is probably a better choice.  
  4. The recipe calls for Platinum Yeast from Red Star, but you can use any commercial yeast you have. I prefer using a fast-rising yeast. 
  5. Room-temperature egg!!! Don’t skip this. You need it at room temperature because you are going to warm your milk and butter. Pay attention to her notes on this as well. You just want it to be warm to the touch. Any more, and you run the risk of cooking your egg, and that would be a disaster. 
  6. Last but not least, I have never understood how people can smear the filling onto dough with softened butter. I personally melt the butter, mix in the cinnamon and sugar, and then it spreads easily onto the dough. Maybe I just don’t know what I am doing, but using softened butter just tears up my dough and doesn’t mix very well. So, in my opinion, you should melt the butter, mix in the cinnamon and sugar, and then spread it onto the dough.

Cream Cheese Icing

A simple cream cheese icing that is not too sweet.

Ingredients
  

  • 4 ounces softened full-fat cream cheese
  • 2 tablespoons softened unsalted butter
  • 1/3 cup PLUS 2 tablespoons & 2 teaspoons of powdered sugar
  • 1 teaspoon vanilla extract
  • 3 tablespoons heavy cream

Instructions
 

  • Using a medium bowl and handheld mixer or a stand mixer fitted with a whisk, beat the cream cheese on high speed until smooth and creamy. Add the butter and beat until well combined. Then beat in the confectioner's sugar, vanilla, and heavy cream. Spread icing over warm rolls and serve immediately.

Notes

  • You always have the option to add more heavy cream to thin the icing out.  3 tablespoons seemed perfect for what I did.
