Crustless Garlic Chicken Pizza

It is a normal, chaotic Wednesday in the Raynor household.  It’s a church night; the kids need to get baths; the hubs and I both need showers; and everyone would have to be fed.  Thankfully, it is summer, so we have a little more time to look presentable for church. Enter my latest recipe, “Crustless Garlic Chicken Pizza”.

Wednesday is a normal pizza night for us. However, I just wasn’t feeling it, and the hubs wasn’t eating any carbs either.  Yet the kids were determined to have pizza. That meant I needed to come up with something that would satisfy everyone.  I knew I had chicken in the fridge that needed to be cooked, but I had no idea what I was going to do.  My first thought was my easy shredded chicken tacos, but we had tacos a few nights prior.

I went searching on the internet.  I found a recipe online from Land OLakes for a Garlic Chicken Pizza.  It looked easy enough.  I decided to change it up a little since my husband and I didn’t want to have any carbs.  That’s how this recipe was born. 

Very little has changed in the recipe.  I only added more chicken, sauce, and parmesan cheese.  The only other thing I changed was placing it in a 7×11 baking pan and baking it all until nice and bubbly.

The great thing about this was that I had all the ingredients on hand AND I could still make my Quick Pizza Dough for the kids. 

Winner, winner, chicken dinner!

Now, you can change this recipe up and use whatever sauce or veggies you prefer.  My preference to keep this low-carb and low-sugar is to use Yo Mama sauce.  Rao’s has a great sauce you could use as well.  The possibilities are endless with this recipe.

What surprised me even more is that when we sat down to dinner, my picky daughter said it smelled super yummy and asked if she could try it.  She loved it!  Now I know it is a definite keeper in this house.

Crustless Garlic Chicken Pizza

Keto? Low Carb? I've got you! This simple recipe makes having pizza with the family super easy. Full of yummy flavors.

Equipment

  • 1 7×11 baking dish or larger if you plan to make more!

Ingredients
  

  • 2 tablespoons unsalted butter
  • 1 tablespoon finely chopped or minced garlic
  • 1-2 pounds boneless skinless chicken breast, cut into bite-sized pieces.
  • 1 cup pizza sauce more or less depending on your taste.
  • ½ cup baby spinach leaves
  • ½ cup shredded mozzarella cheese
  • ¼ cup shredded cheddar cheese
  • cup shredded parmesan cheese

Instructions
 

  • Heat oven to 450℉.
  • Melt butter in 10 inch skillet over medium heat. Add garlic; sauté 1 minute. Add chicken; sauté 4-5 minutes or until chicken is no longer pink.
  • Spray 7×11 dish with oil. Place chicken in dish and cover with sauce, spinach and cheeses.
  • Place in oven and bake until bubbly. ENJOY!

Notes

*This recipe can be used with white sauce as well.
*The amount of sauce is dependent on you.  I do not measure my sauce.  I go for what looks like the perfect amount to me.
*Add more veggies if you like!
*CHEESE! If you like different types of cheese, try adding a little Asiago or Sharp Cheddar.
