Berry Delicious Sourdough Cobbler

I just love coming up with random names for things! I couldn’t resist the name for this cobbler.

This past week, I had a random idea to do a goofy reel on Instagram. The week had been a little rough, and I needed some cheering up. I found a video from back in January when the electric to our dishwasher had been fixed. I was tired from the long day, but when we came home and found the electric fixed, I instantly perked up. No more washing dishes by hand!

This story could be lengthy, and I think I will go more into detail one day, but for today, we are going to stick with my love for coming up with names.

I wanted to make this reel fun, and I had seen others do this cool effect of the person going forwards, then backwards, and then forwards again. I had no idea how to do it. I’m a novice when it comes to editing videos, but I’ve never done what I was trying to do.

Now do you understand?! She had a great laugh over this. My husband tells me all the time that I should write my own dictionary of words. Afterwards, I thanked her for her help and the additions she made to the video.

Let’s get back to this cobbler.

My husband brought home some blueberry pie and apple pie filling and asked me to make some small hand pies. The week was busy, and I wasn’t about to sit and roll out dough with all we had going on. I asked him if I could compromise and make a cobbler. He didn’t fight me. I think he was just happy for me to use it.

Dinner was almost done, and I threw together the dough and poured it into a buttered iron skillet with the blueberry pie filling on top. Then I sprinkled it with brown sugar and cinnamon.

The cobbler was a huge hit!

My husband said it brought back childhood memories of his mother’s cobbler. My son gobbled up his bowl and then wanted more. We took leftovers to my mom, and she loved it as well. Between the two of them, that’s a huge compliment.

Now, for me, it was way too sweet. So, for the sake of my readers who are diabetic or are trying to cut out sugar, I decided to test it one more time using allulose, swerve brown sugar, and a mixed blend of freezer fruit (thanks to the suggestion of a friend) that I had on hand. 

I simply replaced the sugar.  Keep in mind that allulose is a little less sweet than regular sugar. For a regular one cup of sugar, I usually add about ¼ cup more. The swerve sugar ratio is 1:1.  Then, for the frozen fruit, I rinsed it well, as it had been in my freezer for a little while.  I did not want it adding more water to the cobbler.  According to my loving husband, whom I ask all my questions when it comes to cooking, a fresh bag of frozen fruit wouldn’t need to be rinsed.

Much better! I didn’t feel as if I would die afterwards.

My husband enjoyed both, but I am sure he preferred the regular sugar option. Don’t most people? My son wasn’t affected by the difference. He loved it regardless.

One other thing: feel free to use kamut in this recipe. Remember, if you are diabetic, it is lower on the glycemic index.

With the cold weather coming and the holidays approaching, this would be a great addition to the menu. Maybe with some apples.

Hmmm…I may have to give that a try.

Berry Delicious Sourdough Cobbler

Equipment

  • 1 11" or 12" iron skillet

Ingredients
  

  • 1/2 cup (1 stick) butter, cut into pieces
  • 1 cup all-purpose flour or kamut
  • 1 cup sugar 1 ¼ cup allulose
  • 2 teaspoons baking powder
  • ¾ cup milk
  • ½ cup sourdough discard
  • ¼-½ cup berries of your choice. Fresh or frozen.
  • ½ cup packed brown sugar or Swerve Brown Sugar substitute
  • ¼ teaspoon cinnamon

Instructions
 

  • Preheat oven to 350℉
  • Melt butter in an 11"-12" cast iron skillet in the oven. Be sure not to brown. You just want it melted.
  • While butter is melting in oven, mix flour, sugar, and baking powder in medium bowl. Mix in milk and discard.
  • Remove iron skillet from oven and gently pour the batter evenly over the butter. Do not stir.
  • Sprinkle berries evenly over the batter. Sprinkle brown sugar over the top of berries. Next, sprinkle cinnamon over top of the brown sugar.

Notes

*You have the option to replace the milk with kefir.  I simply add 3/4 cup of kefir and an additional tablespoon or two.  Just enough to make the batter somewhat of a pancake mix consistency.
*Be sure to keep an eye on your butter!  You don’t want it to brown in the pan.  You simply want to melt the butter.  And don’t make the same mistake I have in the past.  You only need 1/2 cup of butter which is only 1 stick.
