Berry Delicious Sourdough Cobbler

Equipment

  • 1 11" or 12" iron skillet

Ingredients
  

  • 1/2 cup (1 stick) butter, cut into pieces
  • 1 cup all-purpose flour or kamut
  • 1 cup sugar 1 ¼ cup allulose
  • 2 teaspoons baking powder
  • ¾ cup milk
  • ½ cup sourdough discard
  • ¼-½ cup berries of your choice. Fresh or frozen.
  • ½ cup packed brown sugar or Swerve Brown Sugar substitute
  • ¼ teaspoon cinnamon

Instructions
 

  • Preheat oven to 350℉
  • Melt butter in an 11"-12" cast iron skillet in the oven. Be sure not to brown. You just want it melted.
  • While butter is melting in oven, mix flour, sugar, and baking powder in medium bowl. Mix in milk and discard.
  • Remove iron skillet from oven and gently pour the batter evenly over the butter. Do not stir.
  • Sprinkle berries evenly over the batter. Sprinkle brown sugar over the top of berries. Next, sprinkle cinnamon over top of the brown sugar.

Notes

*You have the option to replace the milk with kefir.  I simply add 3/4 cup of kefir and an additional tablespoon or two.  Just enough to make the batter somewhat of a pancake mix consistency.
*Be sure to keep an eye on your butter!  You don't want it to brown in the pan.  You simply want to melt the butter.  And don't make the same mistake I have in the past.  You only need 1/2 cup of butter which is only 1 stick.
