Sourdough Tortillas

Equipment

  • 1 10" iron skillet
  • 1 scale
  • 1 tortilla press optional

Ingredients
  

  • 210 grams all purpose flour
  • 7 grams salt
  • 100 grams water
  • 56 grams oil olive or avocado
  • 100 grams sourdough discard

Instructions
 

  • Mix flour and salt.
  • Mix water, oil, and discard.
  • Add wet ingredients to the dry ingredients.
  • Mix and knead until smooth and not sticky.
  • Divide the dough into approximately 12 equal balls.
  • Cover loosely and rest for 30 minutes to a few hours. Or you can let them rest and you begin to roll out one at a time.
  • Roll out ball into thin round shape.
  • Heat pan with NO OIL over medium heat. Once hot, place tortilla in pan and cook 1-2 minutes on each side.

Notes

I have read that these will keep in the fridge or freezer, sealed.  I have not tried this as the ones I have made were gone within minutes of coming out of the pan.
Also, I did not allow my tortillas to rest.  I used a tortilla press and would press one tortilla at a time.  I would place one pressed tortilla in the pan and leave the next one in the press.  I do recommend covering your tortilla balls or the air will dry them out.
