Ingredients
  

  • 1 cup natural peanut butter no sugar added
  • 1 cup Swerve Confectioners sugar
  • 1 large egg

Instructions
 

  • Preheat oven to 350℉.
  • In a mixing bowl, combine the peanut butter, Swerve confectioners sweetener, and egg. Stir until a dough forms and everything is well incorporated.
  • Roll into small balls and place on a parchment lined baking sheet.
  • Use a fork to press a crisscross pattern on each cookie.
  • Bake for 8-10 minutes, until the cookies are set.
  • Allow cookies to cool on the pan for a few minutes before moving.

Notes

  • You can use regular no sugar added peanut butter or natural peanut butter.
  • If you're aiming for cleaner ingredients, natural peanut butter is a great option.
  • The confectioners-style sweetener is key here. It helps thicken the dough and creates a better cookie texture than granulated.
  • Cookies will be soft when they come out of the oven but will firm up as they cool.
  • Avoid overtaking to keep them soft and chewy.
