Homemade Chicken and Dumplings

This easy homemade chicken and dumplings recipe combines tender shredded chicken, simple homemade dumplings, and savory broth for a comforting family meal. Made with pantry staples and cooked in one pot, it’s perfect for busy weeknights or cozy Sunday dinners.

Ingredients
  

Chicken Recipe

  • 2 pounds cooked shredded chicken
  • 8 cups chicken broth
  • salt to taste
  • black pepper to taste

Dumpling Recipe

  • 2 cups unbleached all-purpose flour
  • ½ teaspoon baking powder
  • pinch of salt
  • 2 tablespoons cold unsalted butter
  • 1 cup milk

Instructions
 

  • Bring 8 cups of chicken broth to a boil in a large Dutch oven or stock pot.
  • Stir in the cooked shredded chicken and return to a gentle boil.
  • In a mixing bowl, combine the flour, baking powder, and salt.
  • Cut the cold butter into the flour mixture using a pastry cutter or fork until crumbly.
  • Pour in the milk and stir until a soft dough forms.
  • Transfer the dough to a lightly floured surface and roll it to about 1/4 inch thickness.
  • Use a pizza cutter or knife to cut the dough into small squares.
  • Carefully drop the dumplings into the boiling broth.
  • Stir gently and continue cooking for 15-20 minutes, stirring frequently to prevent sticking.
  • Once the dumplings are cooked through and tender, season with salt and black pepper to taste.
  • Serve hot and enjoy.

Notes

  • Roll the dumplings slightly thicker if you prefer a heartier dumpling.
  • Stir frequently while the dumplings cook to keep them from sticking together.
  • Leftovers can be refrigerated for up to 3 days.
  • While this recipe can be frozen, the dumplings tend to become softer after thawing and reheating.
  • For best results, make the chicken ahead of time and store it in the freezer until needed.
  • Prep/cook time is assuming your shredded chicken is already prepared.  If you are making the chicken from raw, the times would be longer.
