Ingredients
  

  • 1 cup warm water approx. 110℉
  • 1 tablespoon instant yeast
  • 1 tablespoon sugar
  • teaspoon salt
  • 4 tablespoon olive oil
  • 2½-2¾ cups unbleached all-purpose flour

Stand Mixer Method

  • In a stand mixer bowl, add 1 cup of warm water, 1 tablespoon of instant yeast, 1 tablespoon of sugar, 1 1/2 teaspoons of salt, and 4 tablespoons of olive oil. Mix together and let stand for 5 minutes until the yeast begins to bubble.
  • Add 1 cup of flour and mix with the dough hook for 3 to 5 minutes. Add another cup of flour and mix until well combined. Continue adding flour in 1/4 cup increments until a soft dough forms. The dough should stick to the bottom of the bowl but pull away from the sides.
  • Let the dough mix for about 8 minutes until smooth and elastic.
  • Take out the dough and place it on a well-floured surface. Shape the dough into a ball, cover, and allow to rise for 30 minutes.
  • Shape the dough into 9-inch rolls and place them on a parchment-covered pan. Cover and allow to rise for 1 hour.
  • Preheat the oven to 350 degrees F. Bake the rolls for 25 minutes. Allow to cool before slicing.

Bread Machine Method

  • In the bread machine, add 1 cup of warm water, 1 tablespoon of instant yeast, 1 tablespoon of sugar, 1 1/2 teaspoons of salt, and 4 tablespoons of olive oil.
  • Add 2 1/2 cups of flour to the bread machine. Set the bread machine to the dough cycle. If needed, add up to another 1/4 cup of flour to achieve a soft dough that pulls away from the sides of the bread machine pan.
  • Let the bread machine complete the cycle.
  • Once the dough cycle is complete, remove the dough from the machine and place it on a well-floured surface. Shape the dough into a ball and then cut it into 4 even sections. Flatten each section and roll into 9-inch rolls. Place them on a parchment-covered pan. Cover and allow to rise for 1 hour.
  • Preheat the oven to 350 degrees F. Bake the rolls for 25 minutes. Allow to cool before slicing.

Notes

When making this Subway-style bread, it's crucial to add the flour gradually. Start with 1 cup and mix for a few minutes, then add another cup and mix well. Continue adding flour in 1/4 cup increments until a soft dough forms. The dough should stick to the bottom of the bowl but pull away from the sides. If using a bread machine, start with 2 1/2 cups of flour and add up to 1/4 cup more if needed to achieve the right consistency. This gradual addition ensures the dough has the perfect texture for soft, fluffy rolls.
