The Best Sourdough Focaccia Pizza – Crispy, Fluffy, and Full of Flavor!
If you’ve been following along with my sourdough journey, you know I love experimenting with new recipes, and this Sourdough Focaccia Pizza is truly a standout! This month, our Recipe of the Month is Sourdough Focaccia Pizza from Amy Bakes Bread. Let me tell you, this one was an absolute winner! My family devoured it in one sitting, and we’ll definitely be making it again.

My Thoughts on Sourdough Focaccia Pizza
One of the things I love most about sourdough is that it teaches patience. This focaccia-style pizza is no different. The dough requires time and care, but the results are well worth it. There’s something deeply satisfying about dimpling the dough—my son even got involved and had a blast pressing his fingers into the soft, pillowy surface.

Amy provides both weight and volume measurements for this recipe, and I highly recommend using a kitchen scale if you have one. It ensures consistency, especially with a high-hydration dough like this.
I followed her instructions closely, feeding my starter (affectionately named Dot, after my precious grandmother) the night before and preparing the dough in the morning. If you don’t have time to tend to the dough throughout the day, Amy suggests an overnight refrigeration method, which I plan to try soon.
Cooking & Freezing Sourdough Focaccia Pizza
For baking, I used a large cast iron skillet, which created a crust reminiscent of a Pizza Hut deep-dish pizza—crispy on the outside, soft and airy inside. If you choose to use cast iron, keep in mind that cooking times may vary.
Now, I did feature this pizza in my freezer meal prep video, but I haven’t tested freezing it myself. In the video, I even mentioned that there was none left for me to try freezing! Given how light and fluffy the focaccia is, I suspect it may not freeze well once baked. If I were prepping pizza dough for freezing, I’d probably stick with my quick pizza dough recipe, which is already on the blog.
A Must-Have Pizza Seasoning
One ingredient I have to mention when it comes to pizza—Dano’s Cheesoning! This stuff is amazing, and we use it every time we make anything pizza-related. The flavor is incredible, and I highly recommend Dano’s products in general for adding a delicious, well-balanced taste to your food. If you haven’t tried it yet, you can check it out here!
Homemade Pizza Sauce – A Work in Progress
Amy includes a homemade pizza sauce recipe, which I love! I firmly believe that homemade pizza sauce is a game-changer. It’s more flavorful, and you know exactly what ingredients go into it. I’ve been experimenting with my own version at home and hope to perfect it soon before sharing it on the blog.
Sourdough Focaccia Pizza – A Weekly Tradition
Every Wednesday night is pizza night in our house. While my crew (aside from my husband) tends to stick with the same toppings, I like to mix things up by trying different doughs. This focaccia pizza will definitely be in the rotation!
Speaking of new recipes—who’s interested in a sourdough pizza pocket recipe? I have a go-to sourdough dough that I use for pop tarts, pies, cheeseburger pockets, and, yes, pizza pockets! Let me know if you’d like me to share it.

Final Thoughts on Sourdough Focaccia Pizza
If you love sourdough and want to switch up your pizza nights, this focaccia pizza is a must-try. Just plan ahead so you have time for the coil folds needed throughout the day! And if you’re in a pinch, don’t forget about my quick pizza dough recipe for those busy nights when homemade pizza sounds amazing but time isn’t on your side.
