Simple HomeMade Waffles
“Ugh! It’s going to be a busy day, and I’ve not prepared a single thing ahead of time. Oh, well. I can just stop and grab them something simple on the way.”
This was us not long ago. It seemed like we were on the go so much that it was just easier to “stop and grab something”. I knew it wasn’t good for me or the kids, but what was I supposed to do? We were in a hurry.
The cereal bar was a quick grab, and so were the pop-tarts. They could simply eat those as we drove down the road. However, I later regretted it when they were still hungry and my little boy was acting like a terror.
I soon realized that just grabbing something wasn’t filling them up. I was only feeding them sugary foods that had been highly processed.
I won’t go on a rant in this post. I will try to do that in another one to give you a chance to decide if you even want to read it. BUT, I will say that by taking out a few minutes on my busy morning to fix something more substantial and with clean ingredients, the behavior of my son changed. Both kids, even my growing teenager, were feeling better throughout the day and realized they weren’t as hungry soon after eating.
We are a very busy family, and I could give you plenty of excuses as to why it would be easier to just go eat somewhere other than home. Yet, I made a choice to stop the cycle and feed my family food I knew would be good for their overall health. It took time, and I’m still working on it.
These simple homemade waffles are one of the ways I’ve made that shift. I can throw it together first thing in the morning and simply add eggs or bacon, and everyone is happy. The great thing is that all of the ingredients are things we commonly keep in our pantry.
You will notice I do offer the choice of honey over sugar and kefir over milk. As little of an amount of sugar that are in these waffles, I don’t really worry about it, but I wanted you to have the option to substitute if you prefer. Kefir, on the other hand, is something we prefer (you can read more about the benefits of kefir from the Mayo Clinic.) My family doesn’t do well with whole milk, and I haven’t quite made the journey into raw milk yet (hopefully soon). Kefir is really great for the gut and is similar to buttermilk in taste. I just simply substitute it for the milk, and my family doesn’t even know. It’s a win-win!
My hope is that this recipe encourages you to see that you can feed your family well—even on busy mornings—without spending a lot of time or money.

Easy Homemade Waffles
Equipment
- 1 Waffle Maker
Ingredients
- 2 cups unbleached all purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 tablespoons sugar or honey
- 2 large eggs
- 1 2/3 cups milk or kefir
- 1/3 cup melted unsalted butter or oil
- 1 teaspoon vanilla extract
Instructions
- Preheat the waffle iron according to the manufacturer's directions (or to 400 degrees if your waffle maker has a temperature gauge).
- Place flour, baking powder, sugar, and salt in a large bowl. Whisk to combine. If you choose to use honey in place of the sugar, wait to add until combining the wet ingredients.
- Add eggs, milk, butter, and vanilla extract to the dry ingredients.
- Drop large spoonful's onto greased waffle iron until most of the wells are covered. Close the lid and cook about 3-5 minutes or until golden brown.
