Thanks so much for trying the recipe! The amount of flour can definitely feel tricky—it’s written as 2 ½ to 2 ¾ cups on purpose. The goal is to add just enough flour for the dough to come together without becoming heavy. Too much flour will make the rolls dense instead of soft and fluffy. I usually end up using close to the full 2 ¾ cups, but I recommend adding slowly so you can stop once the dough is smooth and slightly tacky.
